Battered Apples
1 egg
1 tablespoon agave nectar
1 tablespoon GF oat flour or amaranth flour
2 large apples of choice - peeled, cored and sliced into 1/4 inch slices
2 tablespoons olive oil
In a bowl, combine the egg, agave nectar and flour. Mix well. Add the apple slices to the batter and coat the slices thoroughly.
Heat the oil in a medium skillet over medium-high heat. Add the apple slices to make a thin layer. Fry the apples until golden brown on each side. Move to a plates cover with a paper towel to drain off excess oil. Repeat the frying process until all the slices are done. Sprinkle lightly with cinnamon, if desired, and serve warm.
