Savory Pancakes

Savory Bean & Oat Pancakes

1 cup cooked beans [I like white & black beans]
1 2/3 cup water or milk of choice
2 teaspoons olive oil
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon ground cumin
1/4 teaspoon xanthan gum
1 1/3 cup gluten-free rolled oats

In a blender, combine all the ingredients except for the rolled oats. Blend on high speed for 90 seconds or until smooth. Add in the oats and blend for one minute. Let sit for 5 minutes to thicken.

Heat a skillet or griddle over medium heat [350 degrees F for an electric griddle] and lightly grease with cooking spray. Drop 1/4 cup portions of the batter onto the prepared cooking surface. Cook until browned on the bottom, flip then brown the other side. Keep the pancakes warm until serving by placing them on a rack in a warm oven.

Serve with desired toppings. I like black bean & corn salsa and sour cream on mine.
